In what some are calling a Thanksgiving miracle, the face of ultrarunning legend Scott Jurek reportedly appeared on a slice of Tofurky during a holiday dinner hosted by local plant-based trail runner Katie Marsh.
The apparition, which Katie described as “eerily detailed,” emerged just as she was about to serve the main course. “I was plating the Tofurky slices when I noticed something unusual,” she explained. “At first, I thought it was just gravy pooling weirdly, but then I saw the unmistakable cheekbones and determined gaze of Scott Jurek staring back at me.”
Family members at the dinner initially dismissed the claim as a product of Katie’s overactive imagination, but once the Tofurky slice was passed around, skepticism turned to astonishment.
“I’m not even into this vegan stuff, but that’s Scott Jurek,” Katie’s cousin Bryan confirmed. “You can even make out his visor.”
News of the Tofurky-Jurek quickly spread to the local running community. Within hours, fellow runners arrived at Katie’s doorstep to see the slice for themselves. Many offered up interpretations of the sighting, claiming it to be a sign of good fortune.
“I feel like it’s a message,” said ultra enthusiast Diana Chen, clutching a bottle of Tailwind as she examined the Tofurky slice. “Scott’s telling us to embrace the plant-based lifestyle."
Skeptics were quick to downplay the miracle. Local artist and skeptic Eric Franklin dismissed the image as mere coincidence. “Pareidolia—our tendency to see faces in random patterns—is all this is,” he said while scrolling Strava. “If we’re finding Scott Jurek on Tofurky, next we’ll be seeing Anton Krupicka in a bowl of oatmeal.”
Even Scott Jurek himself responded to the news after being tagged repeatedly on social media. “I’m flattered but also a little weirded out,” Jurek tweeted, adding, “Hope it tasted as good as it looked. Happy Thanksgiving!”
After much deliberation, Katie decided not to eat the now-iconic Tofurky slice. Instead, she’s preserving it in her freezer while she commissions a shadow box to store the holy vegan relic alongside her first 50K finisher medal.
“It’s not every day you get visited by one of your heroes in soy form,” Katie said. “I think Scott would approve of me sharing it with the community.”
Whether it was a miraculous sign or just the result of creative gravy distribution, one thing is certain: Thanksgiving has never been more inspiring—or plant-based.
